This ramshackle trailer in a south side neighborhood serves up classic East TX barbecue. Brisket is heavily smoked but unrendered, really only good for a chopped sandwich. Perhaps due to a high, fast smoke (4 hours)? Ribs are cut in half and maybe thirds, kind of like riblets and are good. Sauce isn't too sweet. Classic East TX style sausage.
