Ambitious joint in a strip mall in Houston's tony Tanglewood neighborhood. Southern pride wood smoker cranks out solid barbecue, but nothing spectacular. Generally undersmoked for my taste. Carving table technique of shearing off the fat cap and dropping in the trash before carving still gives me the willies. Fat is good!
